Expand your knowledge of cooking techniques and recipes at UNM Continuing Education. Are you known for your dinner parties, or would you like to be? Then our cooking classes are for you. Learn new cuisines in fun and delicious lessons. Increase your culinary abilities to spice up your menus.

Our instructors are professional chefs. Most cooking classes follow a one-evening format. Practice cooking hands-on, and enjoy a great meal that you helped prepare.

Learn More and Register

In this introductory class you'll learn how to make fresh pasta in two ways. Fresh egg pasta, primarily a specialty of the north of Italy and the southern Italian tradition of making fresh pasta without eggs. You'll learn how to roll the sfoglia (sheet) with the rolling pin and the pasta machine and the different methods to mold tagliolini, tagliatelle, fettuccine, pappardelle, among others. We'll have fun crafting the most common shapes such as orecchiette (little ears), cavatelli (little hollows), gnocchetti (little gnocchi), trofie (short, thin, twisted pasta). At the end of the class we'll pair them with two different sauces and have a pasta feast!

Learn how to make two traditional and yet versatile Italian desserts. Panna cotta can be made with many different flavors and toppings and Cannoli represents Sicily, with those unique flavors of pistachio, dark chocolate, candied orange and citrus. This class is fully hands‐on. Every participant will bring home a sample of the final product. Each student will prepare the dishes using local, fresh ingredients. Workstation for each participant will allow you to fully participate in preparation, using equipment using traditional recipes and cooking methods. You will experience the culinary arts in a new way. This is more than a demonstration class. Registration closes 2 weeks prior to the start of class.
