Our instructors are professional chefs. Most cooking classes follow a one-evening format. Practice cooking hands-on, and enjoy a great meal that you helped prepare.

The class will focus on the southern Italian tradition of making fresh pasta without eggs. A good eggless dough made from durum wheat semolina flour is perfect to absorb flavors and sauces. We'll have fun crafting the most common shapes such as orecchiette (little ears), cavatelli (little hollows), gnocchetti (little gnocchi), trofie (short, thin, twisted pasta) and we'll pair them with two traditional sauces.

During this class the instructor will walk you step by step through ravioli making–from rolling and cutting dough to make the perfect filling, to shape, seal and cook it properly. The iconic dish that represents the Sunday family meal. After this class you'll be ready to surprise your guests with your homemade lasagne. Lasagne is the way to go when you have a large group of people coming over. You can prepare it in advance and stick it in the oven while you're preparing the rest of the meal. We'll prepare two traditional types of lasagne: one with plain dough, rolled out very thin and with many layers and the other with spinach flavored dough, rolled out thicker and with less layers. Forget about ricotta and marinara sauce and learn how to prepare it the original Italian way: sfoglia (pasta sheet), béchamel sauce and ragł (bolognese sauce). Everything made from scratch!

Come taste the history of Italy through the delicious regional dishes taught by a native Italian food aficionado. This course will take you to the regions of Apulia, Emilia Romagna and Lazio. Prepare the classic dishes from the region and then share the meal in the beautiful Three Sisters Kitchen on Gold Street in Albuquerque. This course has no food fee. Bring an apron and your appetite.Introduction to Apu Introduction to Apulia (Regional Italian Cuisine) The region of origin of the instructor, Apulia is famous for its beaches, olive oil and food. In the first part of the class, Lucio will teach several ways to cook orecchiette (little ears), the characteristically shaped pasta noodle. We will then explore the main alternative to pasta in Apulian tradition: fava beans puree with fried peppers. Enjoy the food at the end of class and look out in the future for Apulian's bakery products: panzerotti and Bari‐style focaccia. Emilia Romagna: home to lasagna and piadina (Regional Italian Cuisine) Emilia Romagna is the region where Italian specialties such as lasagna and piadina originate from. We will prepare traditional lasagna, with besciamelle souce (not ricotta!), mozzarella and a meet ragout. While the ragout cooks, we will prepare piadina, a kind of flat brad which reminds the concept of tortillas in Hispanic cooking. Needless to say, the best part will be to eat the food! Lazio's antipasti (Regional Italian Cuisine) Lazio is the region of the Italian capital Rome. In this first class about Lazio's cooking we will propose some typical starters: mozzarella in carrozza (breaded mozzarella sandwich) and suppli. We will add on the side a Rome‐style salad to enjoy these dishes once they are ready! Note: no fee for food, bring an apron

When you think about pasta you think – Italy! The home country of pasta offers an endless number of shapes that vary from region to region. This course will teach you the art of making pasta from scratch; how to prepare the workspace, mix the eggs (or no eggs) and flour, roll the dough with a rolling pin or use a pasta machine to make many traditional pasta shapes. No doubt Tiramisł is the most popular Italian dessert throughout the world. Biscotti immediately follows. Learn how to make an authentic Tiramisł starting from scratch (we'll make our own ladyfingers and mascarpone cream) and to bake biscotti like they do in Tuscany, its home region. Have fun with this fully hands‐on class and bring home a sample of your final product! Each student will prepare the dishes using local, fresh ingredients.
