Expand your knowledge of cooking techniques and recipes at UNM Continuing Education. Are you known for your dinner parties, or would you like to be? Then our cooking classes are for you. Learn new cuisines in fun and delicious lessons. Increase your culinary abilities to spice up your menus.

Our instructors are professional chefs. Most cooking classes follow a one-evening format. Practice cooking hands-on, and enjoy a great meal that you helped prepare.

Class Name

Crêpes are quick to prepare and can be served at any time of the day. They can be served as a delicious breakfast or brunch, as an afternoon treat, or as a fancy appetizer or main course. Crêpes also make for show‐stopping desserts. Join us and learn about the basic equipment required for making crêpes and how to prepare, flavor and tweak a basic batter in order to create delicious crêpes. Note: A food fee of $15 will be collected at the beginning of the class meeting.

Perfect a delicious talent! Hands‐on practice and demonstrations will help build your high altitude baking skills. You'll put in to practice baking techniques and learn about topics including the chemistry of baking, and weights and measures as applied to cakes, breads, and pastries. Includes Gilda's Buche de Noel for Christmas, as seen in the The New York Times.

No doubt Tiramisu is the most popular Italian dessert throughout the world. Biscotti immediately follows. Learn how to make an authentic Tiramisu starting from scratch (we'll make our own ladyfingers and mascarpone cream) and to bake biscotti like they do in Tuscany, its home region. Have fun with this fully hands‐on class and bring home a sample of your final product! Each student will prepare the dishes using local, fresh ingredients. Workstation for each participant will allow you to fully participate in preparation, using equipment using traditional recipes and cooking methods. You will experience the culinary arts in a new way. This is more than a demonstration class. Registration closes 2 weeks prior to the start of class. The food fee is incorporated into the tuition.

Panna cotta can be made with many different flavors and toppings and Cannoli represents Sicily, with those unique flavors of pistachio, dark chocolate, candied orange and citrus. Note: Participants who wish to transfer their registration from one cooking class to another must do so three days prior to the start of the class they are transferring from. There will be a $20 transfer fee for those students transferring after that period.
